Harvest Right has built a new home freeze dryer that sits on a kitchen counter like a microwave or a coffee machine. No separate pump on the floor, no hoses, no bucket for drain water. We expect the first Countertop 360 units in our European warehouse in January or February 2027.
This is not simply a smaller version of the Small freeze dryer. It is a new design. Harvest Right calls it “a first-of-its-kind leap in home freeze drying”: a compact machine that fits on your counter and still does full freeze drying, from fruit and vegetables to whole meals, meat, dairy and sweets.
Below we go through everything we know about the Countertop 360: how it is built, what changes compared to the classic models, how much food it holds, how big it is in centimetres and how heavy it is in kilograms.
What makes the Countertop 360 different
Harvest Right sums it up in seven points. Here they are, one by one.
1. Built-in vacuum pump
Every classic Harvest Right freeze dryer works with a separate vacuum pump. It stands next to the machine or under the table and connects with a hose and a power cord. In the Countertop 360 the industrial vacuum pump is inside the housing. It is included in the price and you do not need to buy, place or connect anything extra.
2. Built-in drain pan
When a batch is finished, the ice that collected inside the chamber melts and has to go somewhere. With the classic models this water runs through a drain hose into a bucket. The Countertop 360 has a drain pan built into the machine. You pull it out, pour the water into the sink and slide it back. The pan has a “MAX” mark, so you can see how full it is.
3. A true countertop design
No external hoses, no pump on the floor, no bucket. You put the machine on the counter, plug it in, load the trays and press start. This is the biggest practical change. With a classic Harvest Right you need to plan a spot for the machine, the pump and the drain bucket. With the Countertop 360 you plan one spot.
4. Fits smaller homes and apartments
The Countertop 360 is 45 cm tall. The classic Small freeze dryer is 68.1 cm tall, so the new machine is about 23 cm lower. It is wider, 65.5 cm, but it lies flat like a microwave instead of standing up like a small fridge. In many kitchens it will fit under the wall cabinets. Measure the gap in your kitchen before you decide.
5. High capacity for its size
One batch holds 2.3 to 4.1 kg of fresh food. Harvest Right gives a few everyday examples of what fits in one batch:
- 48 raw eggs
- 100 strawberries
- 4 pineapples
- 4 rotisserie chickens
Over a year this adds up to as much as 680 kg of fresh food. Harvest Right calculates this for 4 batches a week, 50 weeks a year.
6. A lower price
Harvest Right gives the Countertop 360 a low retail price, and the vacuum pump is already included in it. The European price at Freezedry.eu will be announced in December 2026.
7. Pays for itself quickly
Harvest Right estimates that the Countertop 360 can pay for itself in 2–3 months of use. The comparison is with buying ready-made freeze-dried food, which is expensive in the shops. The real number depends on what you freeze dry and how often. If you save leftovers, garden harvests or fruit that would otherwise spoil, the machine works for you every week.
Capacity and trays
The Countertop 360 comes with 4 stainless steel trays. Each tray measures 18.1 × 32 cm and is 1.9 cm deep. Together they give 2 310 cm² of tray space.

What you can freeze dry
The Countertop 360 works the same way as the larger Harvest Right models. It freezes the food deep and then removes the water under vacuum. The food keeps its shape, colour and taste. According to Harvest Right, it keeps nearly all of its original nutrition, and properly stored freeze-dried food can last 25 years or more.
Harvest Right lists six types of people who get the most out of a home freeze dryer:
- Everyday preservers. Save leftovers instead of throwing them away.
- Couples and families. Snacks with zero added sugar.
- Healthy snackers. Save fruit and vegetables at peak freshness.
- Garden owners. Keep the harvest from your own garden for the whole year.
- Foodies. Make unique snacks, for example freeze-dried sweets and candy.
- Pet owners. Make 100 % single-ingredient treats.
The machine handles fruit, vegetables, meat, dairy, whole meals and even candy. Harvest Right freeze dryers have a special Candy Mode for sweets.
Four colours
Harvest Right makes the Countertop 360 in four colours: black, stainless steel, sage green and pale blue. Which colours will be available in Europe is not known yet. We will announce them together with the price in December 2026.

Maintenance
There is very little to do. Change the vacuum pump oil every 20 to 40 batches. It takes about two minutes. Clean the freeze dryer when needed. Empty the drain pan after each batch.

The Small holds slightly more food per batch. The Countertop 360 takes less space overall, because the pump and the drain are inside. If you want the machine on your kitchen counter and nothing else around it, the Countertop 360 is the one. If you need more than 4.1 kg per batch, look at the Medium, Large or XL models in our shop.
When it arrives and how to get one
We expect the first Countertop 360 units in our warehouse in Lithuania in January or February 2027. From there we ship across Europe, the same way we ship all other Harvest Right models.
As with every freeze dryer we sell, you get a 12-month warranty. If something breaks, we bring the machine back and repair it ourselves. We also help you get started and send you the instructions.
